How We Process Meat at Wally Smith

On-Farm Slaughter: Low Stress, Better Meat
One of the key things we offer is on-farm slaughter. Our mobile kill truck travels across Waikato on a regular two-week cycle, meaning we can come directly to your property. For the animals, this makes a big difference—no stressful transport, no unfamiliar surroundings. We believe that low-stress handling leads to better-quality meat, and our customers tell us they taste the difference.
If you prefer, we can also carry out the slaughter at our factory—especially useful for pigs and sheep, which need specialised processing equipment.
The Processing Journey: What Happens After the Kill
Once we’ve done the slaughter—either on the farm or in our factory—the carcass is transported back to our facility where it goes through a simple but effective process:
- Step 1 – We complete the slaughter and transport the carcass.
- Step 2– The meat is aged in a temperature-controlled chiller. This helps develop tenderness and flavour.
- Step 3 – Our team processes and vacuum-packs the meat to your exact specifications.
- Step 4 – We deliver the finished product back to your farm—ready for your freezer.
It’s an efficient, no-fuss process that ensures your meat is fresh, flavourful, and cut exactly how you want it.
Custom Cuts and Options
We don’t just pack your meat—we make it personal. Whether it’s steak thickness, roast size, or how you want your sausages seasoned, you tell us what works for you. We’ve got detailed cutting forms to help guide your choices, and we’re always happy to talk through the options if you’re unsure.
We can also make sausages, salami, patties, dog rolls, and more—including gluten-free options.
